Glazed eggplant with miso
The eggplant is certainly a well-rounded vegetable!
Recipes are plentiful across most world cuisines.
In Japan, it is often brushed with a miso (fermented soybean paste) glaze for a delicate sweet and sour flavor. Isabelle likes to add a touch of citrus- and soy-based ponzu sauce for a little acidity.
